Swedish Pancakes

8 farm fresh eggs

½ cup sugar

1 cup flour

1 cup milk

1 tsp baking powder

1 tsp salt

1 ½ tsp vanilla extract

½ stick of melted butter

powdered sugar and butter, to taste

 

 

Blend first four items in blender on slow speed.  Add other items while blender is running.  Note:  Add melted butter last.

Fry in round, electric frying pan at 325 degrees F on each side (use butter or cooking spray to keep them from sticking) until set and very lightly browned.  Remove from pan, spread with butter and sifted powdered sugar and roll up.
