Lentil Burgers

So this is certainly not a breakfast recipe, but I suppose if one was very determined you could invent a way to use them for breakfast.  I prefer mine on a bun for a healthy summer dinner!  The toppings and variations are only limited by your imagination, ingredients in your kitchen and or garden.  It is easily made from vegetarian to vegan by using Extra Virgin Olive Oil and  leaving off cheese and can be Gluten Free by using Gluten Free Buns and Bread Crumbs.

Lentil Burgers

1 1/2 cups dried green lentils
1/4 yellow onion
2 carrots
Bunch Swiss Chard (or spinach, or kale)
1 Tablespoon Dijon Mustard
1 Tablespoon Worcestershire Sauce
1 teaspoon red pepper flakes
1 teaspoon Sea Salt
1 teaspoon Black Pepper
1/4 cup mayonnaise
1/4 – 1/2 cup bread crumbs
8 whole wheat hamburger buns
Tomato (sliced)
Leaf Lettuce
Havarti Cheese

Put lentils in a pot and cover with water.  Bring to a boil and then reduce to simmer, cooking for approximately 30 minutes or until tender, ensuring they don’t boil dry.
Once lentils are cooked drain but reserve some of the cooking water in case you need it for the “burger” mixture.
Place onion, carrots, swiss chard, mustard, Worcestershire sauce, red pepper flakes, salt and pepper in food processor.   Pulse until well blended making a thick paste.  If you need a little liquid to help in this process use the cooking liquid from the lentils.
Add lentils to food processor and pulse until well blended but there are still some whole lentils left.
Add mayonnaise and pulse to incorporate.
Remove patty mixture from food processor and place in a bowl.  Begin adding bread crumbs to mixture slowly incorporating until the mixture will hold its shape.
Portion out 1/2 cup of mixture at a time and shape into a patty and place on a cookie sheet.
Cook in a 400 degree oven for 10 minutes carefully turning the patties over and cooking for another 8 to 10 minutes on the other side.
While patties are cooking, toast the buns, and dress with the  remaining ingredients.   Additional mayo and mustard is optional.

Caprese burgers:  Fresh Tomato, Basil & Mozzarella Cheese
Bacon Burgers:  Take two slices of uncooked bacon, place them in an X and then place the patty on top, wrapping the bacon around the patty.  Certainly turns it into an un-vegetarian burger, but delicious none the less
California Burgers:  Fresh avocado slices and cheddar cheese
Hawaiian Burger:  Grilled Pineapple, what else?  Try combining it with the Bacon burger and Gorgonzola cheese for a something truly mouthwatering.

      They really are amazing Betty! Pair it with some home grown tomatoes and avocada and you will be in burger heaven!
